Degrees: PhD, R.D., CFCS. Received her B.S. in Home Economics Education from Carson-Newman College, M.S. and PhD in Nutrition and Food Science from the University of Tennessee.
Expertise and Activity Statement :
Dr. Hawkins is Area Coordinator for the Food and Nutrition
Area in the Department of Family and Consumer Sciences. Area courses she
regularly teaches are Fundamentals of Foods, Food Science, Medical Nutrition
Therapy and some graduate courses. Additionally, she teaches the Capstone
Seminar for all majors in the Family and Consumer Sciences Department. Dr.
Hawkins directs graduate research where recent projects relate to aging and the
elderly, childhood obesity, a variety of medical nutrition therapy topics, and
effectiveness of various types of nutrition education. She is a faculty advisor
for the local chapter of Phi Upsilon Omicron, a national Family and Consumer
Sciences honor organization. Dr. Hawkins is a past recipient of Indiana State
University’s Caleb Mills Distinguished Teaching Award, the Distinguished Alumnus
Award from Carson-Newman College, the Outstanding Educator in a Coordinated
Program from the Indiana Dietetics Association, and the Leader Award from both
the Indiana and the American Association of Family and Consumer Sciences.
